Hu Tieu

If "Pho" is the typical dish of the North, "Hu Tieu" is the typical dish of Southern Vietnam. "Hu Tieu Nam Vang", "Hu Tieu Sa Dec" and "Hu Tieu My Tho" are the most famous kinds here. It's a Vietnamese noodle soup consisting of broth, rice noodles, a few herbs, meat, eggs, and shrimp.

Hu Tieu is Vietnamese noodle soup consisting of broth, rice noodles, a few herbs, meat, eggs, and shrimp. It's typically served with lots of greens, vegetables, and various other accompaniments such as chili peppers, lemon, bean sprouts. You can use with chili sauce and soy sauce.

Hu Tieu is made from rice flour, mainly is "Nang Thom Cho Dao" rice - the famous kind of rice in the Mekong Delta. Unlike Pho noodles, Hu Tieu noodles are thinner and tougher and having the taste of original rice.

The broth of Hu Tieu is usually stew for 3-4 hours so it's very sweet and delicious. South of Vietnam people loves to eat sweet food so it's considered a typical dish of the land and the people here.

It is eaten as a breakfast dish or as the main meal. It may be served either as a soup (hủ tiếu nước) or a salad (hủ tiếu khô).
